For those that know me, you know that cooking is not my thing. Crockpot recipes that take virtually no skill…yep, those are my thing. In case they’re yours too, today I’m sharing an easy crockpot queso recipe that even I couldn’t find a way to mess up! I made it for our neighborhood progressive dinner on Friday (more on that below!) and it turned out to be muy delicioso…
Here’s what you’re going to need:
2lbs Velveeta Queso Blanco
1 cup milk
2 tbsp. butter
1 (4 oz can) diced green chiles, undrained
1/2 tsp. taco seasoning
1/4 tsp. garlic powder
First, cut the cheese into cubes and place in a mini crockpot.
Pour in milk. Add butter.
Add green chiles, taco seasoning, and garlic powder.
Stir gently and put the lid on the crockpot. Cook on low for 2 hours (or high for 1 hour) and be sure to stir occasionally.
Add a Coronita Margarita and pretend you’re at your favorite Mexican restaurant 🙂
Now back to the reason for the queso and margs…our first annual neighborhood progressive dinner! I say first annual because it was so much fun that it will most definitely be happening again for years to come.
Sarah and I hosted the first stop and obviously selected a Mexican theme. (I love that she loves themes as much as I do!) In addition to the food and Sarah’s cute and tasty drinks, we had a little Mexican photobooth in the foyer. Wouldn’t you know that my family was one of the only ones that forgot to take a picture, but I did sneak into a few group shots…
Just ignore our faces…those mustaches take some special talent to keep on!
And this muchacho pretty much stole the show if you ask me 🙂
It was a great night with some fabulous neighbors and friends.
And now I’d like a margarita for breakfast. Or at least some queso.

I love queso!! What isn’t to love though? Sounds super easy too. Bonus! Okay I want to move into your neighborhood. That dinner sounds like so much fun. I’m a little jealous. 🙂 we may have to start something like that once we get to know our neighbors better.
