Growing up I was a super picky eater. Picky as in I’m pretty sure I never ordered anything other than chicken fingers or grilled cheese at a restaurant until I was maybe 17. I soooo wish I was kidding about this fact, but I’m not! One thing that I would actually eat when I was little was meatloaf, so my poor mom ended up making it a lot. When she told me recently that she made it in a muffin pan and then froze the single-servings, I thought she was brilliant! I mean, this was before Pinterest, people!!!!
So while she was in town a couple of weeks ago, my mom agreed to help me make some of her famous meatloaf and figure out the recipe. She normally just guesses on the measurements–something that the cooking-impaired like me would never dream of 🙂
So now I give you Gigi’s Muffin Tin Meatloaf recipe for all of your little eaters–picky or not!
Hmmm…can you tell I shop at Wal-Mart? And that I’m cheap?!? 😉 |
What you’ll need:
1lb lean ground beef
3/4 cup oatmeal
2 eggs
1/3 cup milk
1 T worcestershire sauce
1 t onion flakes
1/4 cup ketchup (+ up to 1/4 more to taste)
Instructions:
Preheat your over to 350.
Mix all ingredients together…
And this is why I will never be a food blogger…so appetizing, right?! |
Divide into standard muffin pan…
Bake for 30 minutes at 350…
Ignore the fact that my oven needs to be cleaned…
Serve…or allow to cool before freezing.
And that’s all there is to it, friends! So for those lunches or dinners where you’re wondering what to fix your kiddos, just warm up a single serving of meatloaf and let them enjoy!

I've never heard of putting oatmeal in meatloaf. I'll definitely have to try this (: And don't worry, I still order the basics (chicken fingers & cheeseburgers) at restaurants at the age of 24. haha

Baking them in the tins is a great idea! So easy to freeze and take out those nights where you don't feel like cooking 🙂

My Mom has a "famous" meatloaf recipe as well, and most definitely doesn't have the exact recipe. I have resulted in eye balling it as well which is not always easy! Great idea!!!

I LOVE the muffin tin trick! And I'm always looking for a good meatloaf recipe- I literally just throw stuff in and it never tastes all that great. So I'm totally saving this one!

The muffin tin is a great idea for little ones. I love meatloaf, but I haven't made any for Aria yet. I'm totally craving some now. I always ordered chicken tenders up until high school. I was such a picky eater, but I think I'm a little better now. Although I just made some homemade chicken tenders last night. So maybe not. Whatever, chicken tenders rock!

I sometimes wish I could still order grilled cheese at a restaurant! And I love the muffin tin idea! I haven't tried making meatloaf for Hudson yet….but I need too! I sometimes sneak some shredded zucchini into our meatloaf…can't even taste it!

We don't eat beef, but I'm def going to try to make this with some ground chicken, perfect idea for those nights we eat something I know would be difficult for Ashlynn to join (like spicy thai noodles). Love that your mom was 'before her time' with the muffin tin haha
