Hey there, friends! It’s March! Can you believe it?!? MARCH!
St. Patrick’s day is just a couple of weeks away, which means you might be looking for some *lucky* new recipes! Maybe you’ve heard a little chatter about the Lucky Recipe Linkup that some of my blog friends and I are hosting–if not, let me give you the scoop!
Today the 12 hostesses will be posting our recipes and including the linky tool below for anyone who would like to join in on the fun! You’ll share your favorite St. Paddy’s Day recipe (or any random Pinterest one that you want to try, ha!) and linkup by March 10th. On the 10th the linkup will close and you’ll be paired up with another blogger. Now here’s the fun part…you get to take on your partner’s recipe and post about it on St. Patrick’s Day, March 17th! Whether you’re Betty Crocker or not so much (like me!)…it should be a good time for all 🙂
So now that you know how it’s all going to go down, let me introduce the oh-so-delicious….
IRISH BUCKEYES
An easy recipe for the baking-impaired 🙂
The original recipe is from Hope in Every Season, and I have to say, it turned out pretty darn good!
1 cup powdered sugar
1/2 cup creamy peanut butter
3 tablespoons butter
1 tsp. vanilla
1 bag white chocolate chips
green food coloring
(mini chocolate chips are optional)
Mix the peanut butter and butter until creamy, then mix in the powdered sugar and vanilla. I didn’t have any on hand, but you can also add mini chocolate chips here for a little something extra!
Roll into balls and place on a sheet covered with wax paper. Melt white chips and stir in desired amount of food coloring.
Using a toothpick, dip balls in melted mixture, and let harden on wax paper.
I only ended up with about 15 buckeyes (which, let’s be honest, is better for my waistline!) but if you’re feeding a crowd, I would suggest doubling the recipe.
